For this recipe I have decided to make my own customized cabbage stew. Cabbage is used in a number of cultures medicinally and is great for detoxing.
Cabbage has several benefits including 54% of the recommended vitamin C intake for a day and 84% potassium, according to Cleveland Clinic. Cabbage also aids in digestion and heart health by lowering cholesterol and blood pressure.
This recipe is also vegetarian and vegan friendly.
I have always wanted to try my hand at cabbage stew and had a lot of vegetables in my fridge from the week that I wanted to use before they went bad.
For this recipe I used:
Half a head of cabbage
Half a cup of carrots
1 tablespoon of minced garlic (optional)
2 celery stalks
2 zuchinnis
Half an onion
Chicken broth
Salt
Pepper
Turmeric
I first finely diced all of my ingredients. Then, I began cooking by sauteeing my onions in my pot until they became translucent and adding in my garlic until it became browned.
Then you add as much chicken stock as you would like (I used about 3 cups for this recipe).
Once the chicken stock came to a boil, I added the rest of my vegetables into the pot. I let all of these ingredients cook until the cabbage began to wilt and my carrots and celery became tender.
While waiting for your vegetables to cook, you will add your seasonings. I have seen this recipe done a number of ways with many different seasonings, but I only used salt, pepper and turmeric which ended up being all that I needed for this stew, to my own surprise.
Once you have finished cooking your vegetables and seasoned to your liking you can serve on a bed of rice or on its own.
This is another easy and healthy recipe that can be customized in a number of ways. I have seen people add corn, spinach and mushrooms to this soup. I also see a lot of people adding ground beef to this recipe for added protein.
Not only did I enjoy the flavors and nutritional benefits of this recipe, I already had all of the ingredients in my home.
This is a recipe I would not hesitate to give to someone wanting to try something new.
