Roasted pepper and garlic pasta

For this recipe I will be making roasted garlic and pepper pasta. I am a big garlic and pepper fan and this recipe caught my eye when I first saw it. I also love any and all pasta recipes I have tried so far and if you are in the same boat, this recipe is for you!

For this recipe you will need:

Angel hair pasta

6-8 cloves of garlic

½ a cup of olive oil

Rosemary

1 red bell pepper

2 tablespoons of tomato paste 

2 tablespoons of butter

½ cup of grated parmesan

Basil

Salt

Black pepper

First, start by placing your pasta into a boiling pot of water and allow it to cook while preparing your sauce.

Now you will roast your garlic in a small container and olive oil by placing it in your oven for 30-40 minutes at 350 degrees fahrenheit.

You will then char your red pepper by place above a flame (this step will completely change the flavor of this dish but is not mandatory). Peel the skin off of the pepper once it has cooled and add to a blender with tomato paste, butter, parmesan, a basil leaf, or two, salt and pepper. Blend all of the ingredients together until they become smooth.

Take this sauce and add a tablespoon of your pasta water to help combine the sauce and the pasta.

Once your sauce has been combined with some of the pasta water, you can stir in the pasta and your meal is ready to eat!

I see a lot of people eating this on its own but you can also pair it with garlic bread to really bring the meal together.

I’m not going to lie, this meal was very intimidating when I found the recipe and that is why I decided to try it. I wanted to step out of my comfort zone and try something I had never done before.

Roasting the pepper and garlic was a completely new step for me and it was much easier than I thought it would be. I decided that I would love to try more recipes using this form of preparing garlic because it really brought out those flavors and it was too good to not try again in other recipes. This is also how garlic is prepared for various garlic spreads and even garlic bread.
