For this recipe I will be making creamy tomato and spinach pasta.
For this recipe you will need:
Heavy whipping cream
Tomatoes
Spinach
Pasta of your choosing
Minced garlic
Parmesan cheese
Yellow onion
Olive oil
I have begun by adding my pasta to a boiling pot of water (about 2 ½ cups).
Your pasta is going to cook for about 10-15 minutes and while it is doing that, you can begin making your sauce.
I first start by dicing half a yellow onion and adding it to a pan with olive oil. I cook my onions for about 10 minutes or until translucent. Once my onions have been cooked, I add about a tablespoon of minced garlic and mix it in. I continue to cook this mixture until my garlic has turned into a golden brown color.
Once your onions and garlic have reached this point, you will add your heavy whipping cream, I did about two cups for this recipe. Stir your cream to allow the onions and garlic to be removed from the bottom of the pan so they do not burn.
Bring your heavy whipping cream to a low simmer and begin to add your seasonings. You can add whatever you like but I often use garlic powder, onion powder, paprika and creole seasoning for this sauce. You can add or take away and of these seasonings.
Once I have added and stirred in all of my seasonings, I add my cheese which I most commonly use parmesan for this recipe.
I now add my tomatoes, allow them to cook down for a couple of minutes, and add my spinach. Once the spinach begins to wilt after 4-5 minutes, you can strain and add your pasta and serve.
