For today’s recipe, I will be making Lemon artichoke soup. This soup is amazing for protein and fiber and this was my first time making it. If you love vegetables, this will be a soup you enjoy.
For this recipe you will need:
3 chicken breasts
2 cans of small white beans
A bundle of kale
Olive oil
2 cans of artichoke hearts
Chicken broth
2 lemons
Half and onion
¾ cup of white wine
3 tablespoons of dijon mustard
2 tablespoons of lemon pepper
2 tablespoons of minced garlic
You will begin by covering your chicken breasts in your dijon mustard and lemon pepper seasoning. Make sure to thoroughly coat your chicken.
Add to a pot and cook your chicken through.
Take the chicken out of the pot and add your diced onion and minced garlic and cook in olive oil until golden brown.
Use the white wine to deglaze your pot and add back your chicken, chicken broth, and lemon juice and then bring everything in the pot to a boil.
Add your kale, beans and artichokes to your pot and remove your chicken. Shred your chicken and add it back to your pot and stir all of the ingredients together.
Once your soup has cooled, you can serve and enjoy.

The kale that is added to this recipe is a super food. Kale is amazing for a number of things including heart health, bone strength, vision support and digestion. This is because of its vitamin A, K and C content.
This is a recipe I would definitely make again. It had a very unique taste unlike anything I have had before. It was a very filling soup but did not weigh me down like a lot of other filling meals.
I feel that this recipe would be a good one to make on a cold day during the winter months but can be enjoyed year-round for its amazing nutritional value.
